"Already drinking well, this Chardonnay was grown in the Maconnais area of southern Burgundy and handled without oak to retain its fresh, lively fruit characters. This wine has a pale golden colour. The discreet nose opens with notes of citrus and white fruits, like peach. This wine is fresh and balanced on the palate.
The terroirs of Southern Burgundy, with their south/southwestern orientation, been land of vines since Gallo-Roman times. Its limestone subsoils are favourable for the expression of Chardynnay to be drunk youg, in all simplicity!
Just after the harvest, the grapes are pressed in a pnuematic press and then we carry out a static settling of the juices for 24hrs at 12c. The musts are then put directly into vats, the alcoholic and fermentations as well as the ageing are carried out in stainless steel tanks.
Food Pairing: To match toasted fish, summer salad, sushi, seafood or goat cheese.
