Intense rich purple with vibrant magenta hues in the glass. Chocolate, mint, blackcurrant with a hint of oak on the bouquet. Palate is soft and mouthfilling with blackcurrant, mint and French oak on the long finish.
Source from vineyards at opposite ends of McLaren Vale. Our vineyard in Blewitt Springs in the north of the region is planted in sandy soils and gives elegance and length. 22 kilometers to the south on the loam and slate encrusted Sellick Hill sits our second Cabernet vineyard which provides fantastic depth and structure.
Each of the vineyards is kept seperate during the fermentation and maturation process. The thick skins and small berries of Cabernet need to be handled carefully to avoid extracting too much hard tannin. Following gentle destemming and cold soaking at 10oC to release the soft tannins and colour from the skins the juice was innoculated with yeast and allowed to warm naturally to 25oC for fermentation until dry. Basket Pressed the wine was matured in new and seasoned French oak for 12 month, with the final blend selected from the very best barrels just prior to bottling.
