The blend of grape varieties gives spicy blackberryish flavours, dark plum, black cherry fruit and a hint of pepper. There is also distinctive mineral, perfumed notes that come from the Mourvedre.
This is a red blend of 60% Grenache, 35% Syrah and 5% Mourvedre. The vineyards, selected from low yeilding vines come from the areas of Carcassonne and the Minervois, in association with Celliers Jean d'Alibert. This wine is from one of the oldest wine regions in France (the Romans made wine here).
The three varieties were vinified seperately. All went through a period of cold soak. Fermentation on skins lasted 2 weeks prior to pressing. There was very limited used of pressed wine.
Food Pairing: Perfect with all full-flavoured meat dishes and ideal with traditional French cuisine as well as more international dishes whose flavours include a notes of spice.
