A rich and ripe Pinot Noir displaying dark cherry, berry fruit and savoury characters. A generous concentrated palate exhibits well integrated fine tannins, and delivers a wonderful persistence of flavour.
The Pinot Noir grapes were harvested and fermented in small batch quantities; and hand plunged daily. The wine was left on the skins for 21 days post ferment and then drained to older French barriques for 8 months of barrel ageing before release.
Food Pairing: Wide range of cuisine from delicately flavoured cheeses to venison on the barbecue. Our recommendation though is a classic rack of lamb cooked with fresh rosemary.
