Heathcote had a cool dry winter followed by good rains in late spring and an early summer enabled the vines to produce a good crop of flavoursome fruit. A dry harvest period enabled good ripening conditions producing wines with good varietal expression.
Fruit was harvested in the cool of the morning to maximise fruit freshness. Upon reception at the winery, the fruit was carefully destemmed into our Potter fermenters where it underwent a 7 day fermentation. Pressed off at dryness, a small portion matured in Stainless Steel Vat whilst remainder was in new and older American Hogshead and Barrique Barrel's for 12 months prior to blending for bottling.
Deen De Bortoli was a true visionary in the Australian wine industry, whose mission was to create quality wine for everyone to enjoy. The ‘DEEN’ range is a true reflection of his pursuit and a great tribute to Deen himself. Our Father, everybody's Deen.
Food Pairing: Full bodied dry red, enjoy with a rich beef stroganoff, Sunday roast lamb or tagliatelle with burnt butter and sage.
