The Gisborne regions high sunshine hours, clay loam soils and luscious landscapes provide the ingredients for Thornbury to produce outstanding Chardonnays that are full-bodied, creamy in texture and aromatic in tropical fruits such as melon, pineapple & ripe peach.

The fruit for this wine is from vineyards located across Gisborne. The clay loam soils provide optimal conditions for ripening Chardonnay. These vineyards are spur and cane pruned, shoot thinned and leaf plucked to ensure flavor development and healthy fruit.

The grapes from the individual blocks were picked at optimum ripeness. The juice was lightly pressed and run to tank for fermentation. Matured for 4 months in tank on staves before blending, the wine was regularly lees-stirred in tank to provide texture and mouthfeel.

Food Pairing: Fresh caught crayfish and scallops or creamy risotto.
