The soils are mainly composed of clay and characterized by a good presence of limestone, a reddish-brown colour and a very low depth. They are in the heart of the so-called terra rossa (red soil) land.
Harvested in the first weeks of September, before Thermo-controlled maceration and alcoholic fermentation with selected yeasts for about 10 days in stainless steel tanks.
Food Pairing: Good with savoury first courses, red meat and game, mature cheese.
