The Pays d'Ocbenefits from the Mediterranean climate. With its coastline bordering the region in the South, it provides hot and dry summers for a perfect maturity. On the other side, the Black Mountain brings enough humidity and cool temperatures for the vineyards to produce grapes packed with fruity aromas. The terroir effect is very noticeable in this region due to the great variety of winegrowing areas that create an expression of the grape varieties that is unique. This specific Chardonnay is sourced from lowland vineyards from the Pays d’Oc, planted on calcareous marls. These well-drained soils, located close to the Canal du Midi, are protecting the vines from drought as the Chardonnay needs enough watering to produce balanced and healthy grapes.
Chardonnay is the most popular white grape in the world. With grapes sourced along an axis between Carcassonne and Béziershis Pays d'Ocwine region benefits from the Mediterranean climate and is a perfect place to style ripe, fruity yet understated Chardonnay. It provides warm, dry summers for grapes to reach a perfect maturity. To the north the Montagne Noire (Black Mountain range) brings cooler evening temperatures to retain aromatic freshness and vibrant acidity. Gentle pneumatic pressing ensures extraction of premium juice only. Cool fermentation in stainless steel vats at 16/18°C retains fruitiness and to preserve the freshness of the wine malolactic fermentation is inhibited. The wine is aged on its fine lees during 5 months with regular stirring before bottling to add richness and complexity.
