"Aromas and flavours of raspberry and orange, sweet yellow cherry, fruit skin and fruit spice. There’s flavours that reminds me of yellow tamarillo - blast from my childhood. Crisp and dry with a fine tannin quality, plenty of acidity and a fruit core. Aromas of strawberry coulis, berry sorbet and plum blossom. The palate is textured and delicate with flavours of strawberry and cream hints of crisp Pear finishing with a crisp acidity. This Rosé is a great summertime wine, succulent and refreshing drink from late 2023. Drink from now until 2028, Rosé is best enjoyed young and fresh.
Grapes for this Rosé were sourced from different parts of our Bridge Pa Triangle vineyards. Harvested at optimum ripeness, Merlot and a small amount of Cabernet Franc varieties were used to make this Rosé. Spur pruning and excellent fruit exposure produced clean, ripe fruit with great concentration.
Destemmed grapes were transferred to a basket Press. a short period of soaking then pressing was enough to colour the juice to a pale pink. Clean juice was run off to a separate tank to ferment at cool temperatures to retain great fruit flavours and reduce phenolics. The wine was then filtered for bottling late 2023.
Food Pairing: Lemon herb grilled pork chop, crispy tempura squid Caprese salad.
