Graceful and robust, displaying a rich, profound inky hue and lively purple undertones. The fragrance of dark chocolate and mint, accompanied by a touch of sandalwood, leads to a palate graced with blackcurrant and bell pepper notes. Silky smooth tannins add a gentle touch, while an enduring finish and delicate French oak nuances complete the experience.
Sourced from two vineyards across McLaren Vale. Our primary Cabernet Sauvignon vineyard sits on the exposed slate encrusted Sellicks Hill, overlooking the Gulf St Vincent. Fruit from this vineyard provides depth and structure. The second vineyard is planted on deep sandy soils in Blewitt Springs, growing fruit that is aromatic and elegant.
The 2020 growing season was a very good one for quality. A wet winter in 2019 set up the soil moisture well however a cool and windy November resulted in poor fruit set, lowering yields significantly. A generally cool January and February resulted in even ripening and although yields were low the fruit delivered to the winery was in pristine condition with great flavour and vibrant acidity.
Gently destemmed, leaving mainly whole berries. Cold soaked to release soft tannins and colour prior to inoculation with a specially selected yeast strain that steadily warmed the ferment to 25°C, where it was held until dry. Pumped over daily. Maturation for 12 months in second and third use French oak. Each parcel was processed separately to allow maximum flexibility and expression of the best flavours and characters from each site during final blending.
