Description
Very dark, iodine intensity. Aromas of prunes and raisins on the nose. Opulently sweet with caramel, raisin flavours, dried plum and figs. A wine from the Pedro Ximenez grapes are first left in the sun to become raisins before pressing. Aged for many years in the solera system.
Pedro Ximenez Triana is made from the grape variety "Pedro Ximenez". After being left in the sun, the fermentation is interrupted by the addition of alcohol to 17% leaving a very high residual sugar content. The wine is then aged in oak barrels.
Matured in barrels of American oak using the traditional 'Solera' system using the 'oxidative' ageing process to give the full rich nutty flavours. Before bottling. the wine is stabilised using a cold treatment process and filtered. Bottled exclusively by Bodegas Hidalgo La Gitana.
Food Pairing: Serve at room temperature with desserts, pudings, ice cream etc.
