This Pinot Gris is a genuine ode to New Zealand's varied terroir, with its grapes sourced from the emblematic regions of Marlborough and Waipara in the South, and Hawke’s Bay in the North. The 2023 vintage will be remembered as a year of contrasts, aptly termed a "tale of two islands".
Renowned wine critic, Sophie Parker MW, in her New Zealand Vintage Report, described 2023 as a season that was "vastly better than 2022 for some, while challenging for others." Marked by the La Niña conditions, the year showcased the unpredictable whims of nature. The North remembers it as the 'Gabrielle' vintage, marked with challenges and stress, whereas the South celebrates it for its good to exceptional yields, driven by location specifics.
In such a year, Toi Toi's foresight in leveraging regional diversity shines. Our well-timed harvests mitigated the effects of an erratic climate, yielding quality fruit with exceptional flavour.
We prioritized capturing this essence by picking the grapes at the pinnacle of their flavour profile. Our gentle approach, using a select de-stemmer harvester, was paramount in preserving the grape's integrity. The subsequent fermentation in stainless steel tanks at cooler temperatures, with chosen yeast strains, was instrumental in maintaining the wine’s delicate fruit nuances. Post fermentation, as the batches were blended and rested on light lees, regular stirring enriched the wine with a creamy depth, ensuring a full-bodied and rounded mouthfeel.
