Description
A wonderful textural element on the palate that is reflective of an Alsatian style while retaining a clean acidity that is a hallmark of Carrick's windblown glacial soils on the Cairnmuir terraces in Bannockburn. Subtle blossom aromas with flavours of white nectarine close to the stone are evident. A lovely structural white wine that sits nicely in the glass, perfect as a late afternoon aperitif.
Carrick has always been about place. The name derives from the gold mining town and the mountain range to which Carrick looks. The wines are of Central Otago and its subregion, Bannockburn. Carrick's own vineyards are nestled around the winery and every effort is made to allow the wines to express their place and their providence.
The vineyards are tended by hand allowing for careful management of the individual vines from pruning, leaf plucking, shoot-thinning right through to harvesting.This wine was whole bunch pressed and fermented using wild yeast to foster complexity. Regular stirring of the wine as it ferments and matures, keeps sediment in suspension which further encourages texture development. 60% of this wine was fermented in neutral French oak barrels, and aged on its lie for 6months.
