These ideas tranistion to the palate very nicely and with tannins and salivating acid lines to deliver a wine with power and mouthfeel making it ideal for by the glass drinking and food pairing. "Deep, ruby-red with a black hue, lighter on the rim. The nose is full and elegantly presented, aromas of red plums and blackberries entwined with flint, spice and minerals. Full-bodied, plums and blackberries enriched by black pepper, meaty and flint element. Tannins extraction added a firm yet smooth grip and provided structure, entwined with cloves, barrel flint and vanilla complexity. The fruit is selected and harvested from within the internationally acclaimed Gimblett Gravels wine growing district of Hawke’s Bay.
Fermentation carefully monitored and hand plunged every four hours. Once dry the wine was gently pressed. Both free run and pressings kept in tank until ready to be racked off gross less. A mix of portions matured in seasoned and new French oak for 6 months before being carefully prepared for bottling.
