"Bright, light golden-hued straw-yellow, paler on edge. The bead is persistent and moderately fine. This has a very elegant, tightly concentrated nose with intense and penetrating aromas of white and yellow stonefruits entwined with delicate nutty and oxidative complexities and fine, bready-yeasty autolysis. Some waxy detail unfolds to add interest. Dry to taste and medium-bodied, the palate features tightly concentrated and intense flavours of yellow stonefruits along with apples and nuts, and refined yeasty autolysis. The flavours form a fine, deep heart and the wine flows with good tension and poise along a fine-textured phenolic line. The effervescence and acidity lend liveliness and vitality to the mouthfeel, and the wine leads to a light, but complex-nuanced finish. A blend of 50% each Pinot Noir and Chardonnay from 3 vintages. A pure jewel! This extra-brut is eye-opening for champagne lovers. Produced from old vines of Chardonnay and Pinot Noir and cellared 4 years. The "Extra Brut" absence of residual sugar is compensated by the rich fullness of the pinot noir, which is 50% of this premier cru "assemblage." The wine is perfectly balanced.
