"What was previously released as the Oakville Cabernet, the 2019 Cabernet Sauvignon Estates Tier comes all from To Kalon and was fermented in oak tanks and aged in 96% French oak. The blend is 85% Cabernet Sauvignon, 6% each of Cabernet Franc and Petit Verdot, and the rest Malbec. Ripe black fruits, smoked herbs graphite, and even a touch of minerality define the bouquet, and it's full-bodied, concentrated, and beautifully textured on the palate. Our Oakville Cabernet Sauvignon is a traditional blend of all five Bordeaux varietals, with the final blend selected to showcase freshness and complexity while maintaining the beautiful varietal character of fruit from Oakville.
The Estates Tier highlights wines sourced from a collection of vineyards in select appellations within Napa Valley deemed by our winemakers to be among the very best.
The fruit for this wine came predominantly from our To Kalon Vineyard, which is located on prime benchland in the Oakville District appellation. The well-drained, low-fertility soils and optimal sun exposure here enable the development of rich, complex flavors, impeccable phenolic maturity, and varietal character.
The 2019 vintage was a winemaker’s dream. Following rain in March and April, and a long, moderate summer, we saw smooth, even ripening through to harvest. Each block was hand harvested at its ideal point of ripeness from September 26 to October 22. The wine spent 32 days on the skins to maximize varietal character and keep the tannins supple. Each lot aged for 20 months in French oak barrels (90% new) before the final blend was determined.
